Ingredients:
- 1 2/3 cups andouille sausage (396g)
- 2 tbsp olive oil, divided
- 1 cup yellow bell pepper
- 1 cup carrot
- 1 cup red bell pepper
- 1 cup potato cut into wedges
- ½ cup onion
- 4 cloves garlic, minced or pressed
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes, optional
- Fresh chopped parsley or basil for garnish
- ¼ cup green onion, sliced, for garnish
- Salt and fresh ground pepper to taste
Instruction:
- In a large pan, add 1 tbsp of olive oil over medium heat.
- Cook the sliced sausages, carrot and potato wedges for about 5 or 6 minutes or until they are browned on all sides. Once cooked, remove them from the pan and place them aside.
- Return the skillet to heat and set the heat to medium-high. Add the last of the olive oil.
- In the pan, add the onions and peppers; season with Italian seasoning and cook for 4 to 5 minutes or until crisp and tender.
- Add the garlic, season with salt and pepper, and sauté for a minute.
- Add the sausages, carrot and potato to the skillet and heat thoroughly for one minute.
- Taste for pepper and salt, and then adjust accordingly.
- Add pepper flakes, green onions, parsley, or basil as garnish.
- Serve and enjoy.
