Ingredients:

  • 1 block (250g) tempeh (also used tofu instead of tempeh)
  • 1 cup pineapple, peeled and cored
  • ½ cup red onion, cut into cubes
  • ½ cup red bell pepper, cut into cubes
  • ½ cup yellow bell pepper, cut into cubes
  • 2 tbsp soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste

Instruction:

  1. Heat the grill or grill pan to a medium-high temperature.
  2. Cut the tempeh into roughly 1-inch-wide cubes.
  3. Cut the pineapple into cubes of comparable size.
  4. On skewers, alternate the ingredients of tempeh, pineapple, red onion, red bell pepper, and yellow bell pepper.
  5. To make the marinade, combine the smoked paprika, garlic powder, soy sauce, maple syrup, olive oil, apple cider vinegar, salt, and pepper in a small bowl.
  6. Make sure each piece of the kebabs is thoroughly coated with the marinade by brushing it on.
  7. Grill the kebabs on each side for 3-4 minutes or until the tempeh and veggies are browned and tender.
  8. Serve the kebabs immediately with rice.
