Ingredients:

  • 2 cups gnocchi
  • 1 tbsp olive oil
  • ½ cup red onion, sliced
  • 2 cloves garlic, minced
  • 1cup zucchini, diced
  • ½ cup red bell pepper, diced
  • ½ cup yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup vegan cream (such as oat or soy cream)
  • 1 ½ tbsp nutritional yeast
  • A handful of fresh basil, chopped
  • Salt and pepper, to taste

Instruction:

  1. Cook the gnocchi per the directions on the package, then drain and place aside.
  2. Place a large skillet over moderate flame and Heat the olive oil. Add the thinly sliced red onion and cook for 2 to 3 minutes or until caramelized.
  3. When aromatic, add the minced garlic and cook for one more minute.
  4. Sauté the diced zucchini, red bell pepper and yellow bell pepper in the skillet for 5-7 minutes or until the vegetables are soft.
  5. Next, add the cherry tomatoes, cut them in half, and cook for two to three minutes or until the tomatoes are tender.
  6. Stir in the nutritional yeast and vegan cream after adding them. Simmer the sauce for 2 to 3 minutes or until it is well-cooked and slightly thickened.
  7. Toss the cooked gnocchi in the sauce in the skillet after adding them.
  8. To taste, add salt and pepper to the food.
  9. Before serving, garnish with fresh basil.
