Ingredients:
- 2 cups gnocchi
- 1 tbsp olive oil
- ½ cup red onion, sliced
- 2 cloves garlic, minced
- 1cup zucchini, diced
- ½ cup red bell pepper, diced
- ½ cup yellow bell pepper, diced
- 1 cup cherry tomatoes, halved
- ½ cup vegan cream (such as oat or soy cream)
- 1 ½ tbsp nutritional yeast
- A handful of fresh basil, chopped
- Salt and pepper, to taste
Instruction:
- Cook the gnocchi per the directions on the package, then drain and place aside.
- Place a large skillet over moderate flame and Heat the olive oil. Add the thinly sliced red onion and cook for 2 to 3 minutes or until caramelized.
- When aromatic, add the minced garlic and cook for one more minute.
- Sauté the diced zucchini, red bell pepper and yellow bell pepper in the skillet for 5-7 minutes or until the vegetables are soft.
- Next, add the cherry tomatoes, cut them in half, and cook for two to three minutes or until the tomatoes are tender.
- Stir in the nutritional yeast and vegan cream after adding them. Simmer the sauce for 2 to 3 minutes or until it is well-cooked and slightly thickened.
- Toss the cooked gnocchi in the sauce in the skillet after adding them.
- To taste, add salt and pepper to the food.
- Before serving, garnish with fresh basil.
